The core spread is fluffy scrambled eggs topped with cheddar, gourmet bacon and sausage links, southwestern quiche, warm muffins and danishes, fresh fruit and chilled juices, and yogurt with fruit dips. That covers most rooms, and nobody’s got to think about it.
From there it moves in either direction. If it’s a short morning meeting, a continental buffet with coffee service is enough. If the room’s staying put for a couple of hours, omelets and hot entrees earn their place.
Religious and dietary limits are normal here rather than an exception. Turkey bacon and vegetarian plates go on the same order as everything else, so you don’t have to place a second one.
Everything can be dropped off and set up, or staffed if you’d rather have full service catering.
These are the opposite problem to an office breakfast. You’ve got large headcounts, a serve-yourself line, and food that has to hold while people arrive in waves across an hour.

A longer, later sitting is a different menu. That’s brunch catering, and it starts around 10 with bigger plates, eggs benedict and a line built to hold for a few hours.
